There are supermarkets & party shops but that means face to face with a cashier.

Got some stuff from the store Bargain Balloons, and they should be added to the list. There's a Canadian and American site, and their Canadian warehouse is in Mississauga. (Bargainballoons.ca)

I know of one really good Spanish party supply chain store but I don't think they have any places on the mainland... If you're in any of the coastal resorts spring/summer then you'll be able to find inflatables no problem. 9/10 all the same but sometimes some interesting ones if you look enough.

France I've no idea, and the UK I struggle to think of any reliable national chains.

You're probably better to just searching online for the areas you will be going to I think.
